Ingredients Of Paris Brest With Hazelnuts

You have to collect the ingredients for three different parts of this recipe. Let’s have a look:

  • ¼ cup of sliced almonds.
  • 1 cup of hazelnuts
  • ½ cup of granulated sugar

This is for making the praline. You need to have the following ingredients for the cream filling.

  • 3 large egg yolks
  • 1 cup of whole milk
  • 3 tablespoons of cornstarch
  • 2 tablespoons of unsalted butter
  • ¼ teaspoon of salt
  • 1/3 cup of granulated sugar
  • ¾ cup of heavy cream
  • ½ teaspoon of vanilla essence

Aside from these, choux pastry is to be made. So, you need to have the following

  • ½ cup of unsalted butter. You can cut it into cubes
  • ½ teaspoon of salt
  • 1 cup of water
  • 4 large eggs
  • 1 teaspoon of granulated sugar
  • 1 egg yolk
  • 3 tablespoons of sliced almonds
  • 1 tablespoon of confectioners’ sugar. Keep some for dusting.

Instructions

The cooking process of Paris Brest with hazelnut has three different parts. In the first step, you need to bake the praline. In order to do so, you need to toast hazelnuts and remove the skin. When it is done, you need to steam it and cook sugar into the caramel till golden in color. After that, stir the caramel with the nuts for coating. Now your praline is ready. Now you need to prepare the cream filling. You need to add sugar, cornstarch, egg yolks, and sugar to the heated milk. When mixing is done, transfer it to a saucepan, heat it again. After it is thick enough, you need to stir vanilla essence and butter. Next, you need to mix it in a large bowl when it is chilled.

Now what remains is to make the choux pastry. In that case, you need to boil water with granulated sugar, salt, and butter. When they are mixed properly, you can reduce the heat.  After that, add all flour at once and start to cook while stirring it with a spoon. When the mixture is dried up, you need to add eggs. After the dough is prepared properly, you can transfer it to a pastry bag and start making your choux pastry. After baking it for 20-25 minutes, your pastry will be ready for serving.
