No-Bake Lime Icebox Cake Recipe
Here’s another no bake lime pie recipe that’s just as easy and delicious! It’s essentially an icebox cake so it requires zero cooking. And, while there are many variations of this dessert, our recipe is one of the best out there because it has just the right amount of tartness. For example, other recipes suggest adding lemon or lime juice to the cream cheese mixture but we found that too much citrus made the crust soggy after refrigerating for several hours. We recommend using unsalted butter instead for a flavor that isn’t too overpowering.
Ingredients:
1 cup of graham cracker crumbs
6 tablespoons of unsalted butter, melted
8 ounces of cream cheese, at room temperature
1/2 cup of sugar
1/4 cup of lime juice
zest from 1 lime
2 cups of whipped cream
Instructions:
1. In a bowl, mix together the graham cracker crumbs and melted butter until well combined. Press the mixture evenly into the bottom and up the sides of a 9-inch pie dish. Freeze for 10 minutes.
2. In a large bowl, beat the cream cheese, sugar, lime juice, and zest with an electric mixer on medium speed until smooth. Fold in 1 cup of whipped cream. Pour the mixture into the crust. Freeze for 3 hours or until firm.
