
Profiteroles are also known as cream puffs. It is also called French choux pastry ball. The filling is sweet and moist. This consists of whipped cream, custard, ice cream or pastry cream. You can decorate the puffs or you can leave it plain. You can also garnish it with caramel, chocolate sauce or some powdered sugar for dusting. These profiteroles can also be filled with cheese or pureed meat and many more. These were originally common garnishes used for soups. It is called by different names in different places. These pastries can be paired with a particular kind of filling or sauce.
How To Make Profiteroles With Coffee Ice Cream:

To make these profiteroles, it will take you around 45 minutes. This recipe is for 6 servings.
Ingredients:
The Profiteroles:
Coffee ice cream ( one quart). Unsalted butter cut into pieces (six tablespoons). Water (three-fourth cup). Salt (one-fourth teaspoon). All-purpose flour (three-fourth cup). Eggs of large size (three).
For The Chocolate Sauce:
You will need sugar (half a cup). Heavy cream (one cup). Bitter-sweet chocolate which is of fine quality (seven-ounces). This chocolate should not have more than 60% cocoa. You need to chop this finely. Extract of Pure vanilla (half a teaspoon). You can also add cognac or brandy (one tablespoon, optional).
Equipment Required For This:
A small ice cream scoop of about (one and a half inch). A large pastry bag that has a plain tip of three-fourth inch fitted to it. You will need a large pastry bag that has a plain tip of three-fourth inch fitted in it.
Methods To Make It:
To make the profiteroles you need to chill in a freezer a small metal baking pan. Make around 18 ice cream balls with the ice cream scoops and freeze it in a chilled pan for at least one hour. This process will make your serving quicker. At 425 degrees Fahrenheit preheat the oven placing the rack in the middle. Grease the baking sheet with butter. On a small but heavy saucepan bring water, salt, and butter to a boil. Keep stirring till the butter melts. Reduce to medium heat and add flour and cook. Use a wooden spoon to beat it until the mixture forms a ball, for about 30 seconds. Put the mixture to a bowl and let it cool for 2 to 3 minutes.
Now add eggs one at a time and beat well using electric mixer after every addition. Put the warm mixture into a pastry bag and pipe it. This can be about one and one-fourth inches wide and of one inch high. Bake it till it becomes puffy and is of golden brown color for about 20 to 25 minutes. Using a skewer prick each of the profiteroles.
Make The Chocolate Sauce For Profiteroles :
On medium heat, in a saucepan heat the sugar. Cook it till it becomes of dark amber color. Remove it from heat and add salt and cream. Again heat and cook till the caramel gets dissolved. Remove from heat and add chocolate and vanilla and cognac if you are using. Keep it warm.

Cut the profiteroles into half and fill it with a scoop of ice cream and pour chocolate sauce on top and serve.
