Directions:

In a small saucepan, heat the milk and cream until scalded. While still hot, whisk in the cornstarch until smooth. In a separate bowl, whisk together the eggs, sugar, and vanilla extract. Temper the eggs by slowly whisking in some of the hot milk mixture, then pour the tempered eggs back into the saucepan. Cook over low heat, stirring constantly, until thickened and bubbling.

Meanwhile, soak the gelatine sheets in cold water for 5 minutes to soften. Drain well and add to the hot milk mixture. Stir until dissolved. Pour mixture into a 9-inch (23 cm) pie plate and refrigerate until set, about 2 hours.To serve, top with grated carrot .
